Sweet Potato Apple Hash

This is a great fall recipe coming to you just in time for the holidays! Sweet potato, apple, and bacon....what else do you need?

Yield: 10-12 servings


  • 4-5 medium sweet potatoes, cubed

  • 2 granny smith apples, cubed

  • 1 large white/yellow onion, diced

  • 6-8 strips of bacon, cooked and chopped

  • 4oz white or crimini mushrooms

  • 3 cloves garlic, diced

  • 1/2 can coconut cream

  • 1/4 cup coconut butter

  • ~1 tbs rosemary

  • ~1 tbs thyme

  • salt and pepper (no pepper for AIP)

  • coconut oil

  • Coconut flakes


  • Preheat oven to 425

  • Cook bacon on stove top or in oven, reserving the rendered fat

  • Toss sweet potatoes in bacon fat and/or coconut oil, place in oven with timer set to 40 mins

  • Begin to caramelize onions and mushrooms in bacon fat and/or coconut oil

  • With 30 mins left on sweet potatoes, add the apples and stir

  • With 20 mins left, add rosemary and thyme

  • Bring coconut cream, coconut butter, and a pinch of salt to a simmer on very low heat, allowing the sauce to thicken

  • When onions are close to done, add diced garlic and bacon; add salt and pepper to taste

  • When sweet potatoes and apples are done (tender but not mushy), remove from oven, salt and pepper to taste

  • Combine onion/mushroom/bacon mix to the hash, stirring to incorporate

  • Pour sauce over hash, top with coconut flakes and garnish with a couple sprigs of rosemary
